These fish are typically caught during the monsoon season and are sun-dried to preserve their natural flavors and extend shelf life. The drying process involves cleaning the fish, removing heads and guts, and then sun-drying them for several days until they achieve a firm, dry texture. This preservation method not only extends the fish’s usability but also concentrates its nutrients and flavors.
