Description

The Chinese Pomfret (Pampus chinensis) has a deep, compressed, oval body. Its skin is smooth with silvery scales that are more vivid on the belly and fade to gray-brown on the back. The dorsal and anal fins are well developed, giving it a graceful profile. When fresh, the skin exhibits a subtle sheen and the fish feels firm to touch. The flesh is mild in flavour—neither too oily nor bland—and has a fine texture. It flakes gently and remains moist when cooked, whether steamed, grilled, or lightly fried. The body yields good edible meat, particularly from the central portion, while bones are thin and small. These qualities make Chinese Pomfret desirable in premium seafood markets and suitable for export in fresh, chilled or frozen pack forms.
